I tried to go by the BGE DVD. I thought cheese on bottom and top would help hold it together when flipping. So I used cheese,onions,yellow banana peppers, ground up Fattie from Friday and then more cheese.
I went for 500 degrees for about five min. and when I flipped it over some of the filling fell out but I did better on the second one, it held together very nicely. I guess the pizza stone hadn't heated up enough for the first one.
All in all I'd say they turened out pretty good. I'll be doing this again.

Nice Peel. Homemade? I suspect the circle drawn on the peel is the pizza stone size - good idea.
Nice QDias as well. -
Next time try a 12/13 inch tortilla and spread the cheese on half of it. Fold over and let the cheese melt. Pull apart and add your other ingredients on the melted cheese. Fold over again and finish grilling. You should get 3 good size triangles out of one tortilla. Good luck, Tom
