Comin' up on 6 hours for a 3.75# roast and all is well. It took hours to get through the plateau @ 160 but now the temp is climbing again. Think I'll pull it @ 170 and confine it to a foil-sealed vessel after adding a bottle of Samuel Adams Honey Porter. Not sure how long I'll be able to let it "rest" as I've already been nippin' little samples off that crispy, end piece.
