Ok..Here goes. We have a rack of lamb that I trimmed and rubbed down earlier this afternoon with Penzey's Lamb Seasoning. I then immediatley sucked it up with the FoodSaver in a casserole dish.
This is our first try with lamb. Wish us luck. We are going for 15 minutes on each side at about 350. Is this too much? Thanks!

    If cooked direct, it sounds like too much. Why not stick a thermometer in the mear and pull it off at 140 for medium rare?
