I am cooking for an event at work (not getting paid but all food was provided). I am doing pulled pork and chicken plus beans, slaw, and tater salad. I figure about 22lbs pork + 3 whole chickens. Does that sound about right? Both will be served with buns for sandwiches. There is much more food, but I wanted to know if the meat amounts sounded about right.
TIA,
Cory

22 pounds of raw pork will yield about 13 pounds cooked. 1/4 pound per person that 52 servings.
Three whole chickens will yield about 12 servings.
You have plenty.. -
I'd plan on a lot more chicken...
We did a spatchcock yesterday at the Mid-Winter-Fest, and it was ripped clean off the bone in about three minutes. Good, too!

I agree with Broc. Although I have never cooked for forty I would think the number of chickens needs to be greater. Especially if you think each person will take both the pork and the chicken. Each chicken yields about 8 pieces maybe 10 if you split the breasts in half. If my assumptions are correct i would add a minimum of two to three more chickens.

Thanks for both of the answers. I was curious about how much I would lose in the cooking process. I had planned to chop all of the chicken, I imagine that it should yield about 6lbs or so. Also, there will be portabello mushroom steaks w/Bleu cheese for those that aren't so carniverously inclined.
Thanks again,
