if i dont do mine 311 i will still cook indirect but will cook them for 4-5 hours at about 225-250. they are done when they are done or have a nice bend in the middle and the meat is pulling away from the ends of the bone. i think i prefer this over 311 now that i have done it a couple of times.

I guess my first question is, why direct? Are you wanting faster results?

I really just want to try direct to see how they come out. Also the 3-1-1 method tends to be a lot of work.
