That is a nice-looking meal you put together. The last picture makes the steak look like a huge Fred Flintstone steak

D, Not sure where you stand on what I did with these steaks.

I'm not a T-Rex'er. I prefer to do them more like the BGE CD recommends. In this case, with 1.5" thick ribeyes, I seared them at 650 degrees each side for 2 minutes, then flipped them, shut the vents, and left them in the BGE for another ~3.5 minutes.

They turned out nicely, we thought.

I tend to cook steaks in the 450-600 range.

Whenever I go for nuclear sear I get charred steak.

So I do more or less what your doing.
