Group effort dinner

I don't know what I did before joining this forum, used to be so hard to come up with different meals every day, but now I can just have a look at what everybody else is doing, and take my pick. Tonight's choice was rolled chicken breasts mentioned by AZRP a while back, but instead of rolling up cheddar and jalapenos, I did Swiss cheese and ham, but still sprinkled with Raging River. Served them with Brussel Sprouts the way BobS described yesterday, Celtic Wolf's buttermilk biscuits (a staple in our house) and my own jasmine rice with mushrooms and Shakin' the Tree. The meal was a hit - thanks for your help everyone, keep those ideas coming.

    Great stuff, isn't it? The hard part is keeping the chicken buttoned up tight enough so the cheese doesn't run out. But once you get it...mmmm.mmm

  • Celtic Wolf's biscuit recipe was in last year's Florida Eggfest cookbook which I got from Naked Whiz's site (tons of great Eggfest recipes available there). I can't get the link to paste in here, but if you go to www.nakedwhiz.com/cookbooks and scroll down to Egret's 2007 Florida Eggfest Cookbook, the biscuit recipe is on page 13.

    if you like the rolled chicken. and you like hot wings you might want to try stuffed thighs.

    i stuffed them with celery and blue cheese and dipped them in hot wing sauce they turned out great!! ;)
