    Just did one a few weeks ago. Stabilized the egg at 325, seasoned the roast with Dizzy Pig Raising the Steaks, put it on a vRack over a pan that was set on 2 firebricks. I have a medium egg. Inserted a remote thermometer set at 127, tented in foil for 15 minutes after it was done. Medium rare. Great sandwiches.

    I'll start... Indirect, 275 - 300 dome temp until it's 125 - 130 internal. Then wrap in a couple of layers of foil and rest in the pre-heated, dry cooler wrapped in some old towels or newspaper for an hour. Slice thin and enjoy!
