Double smoked ham! WOW!

Did our first double smoked ham, man that is some good eats. Bought a half bone in smoked ham and simply coated it with a mixture of honey,maple syrup,dijon mustard and pepper. Stabilized egg at 275-300 with inverted plate setter then grate and extended grate.Added one chunk apple wood and let it settle. Cooked until 235 and let rest 15 minutes.
Very good!
We'll save the bone add a couple smoked ham hocks and make the best split pea soup you ever had :)

    The ham bone and hocks work good on a pot of great northern beans too.

  • We do bean soup too! It's also VERY good with a Picnic ham bone and a couple of smoked hocks! Yummy :)
  • Never tried those. Usually use navy beans.
  • Had to ask the wife cause I new we used navy beans and she said those are the same as great northern beans.

    They are really close, both are grown in the midwest states. Navy beans are smaller than GN's and sometimes called "pea beans".
