Here are the steaks with just some kosher salt and some fresh ground black pepper before the sear.


Second side, just before they were pulled for the rest.


Final product. Man, were they good. I put some seasoning on after they were pulled, and it cooked nicely during the roasting phase.

    Thanks, Fidel! I'm looking at doing some of the wrapped chicken breasts like you did just recently. Think that I'll do the pepper jack cheese instead of the swiss, though.
