Guava wood

I am smoking a chicken tonight for the first time with Guava wood chunk. Should I soak it first or not. If no soak, when should I add it to the fire and how soon afterwards should I put the chicken on?[p]John

okeejohn,[p]I would not soak. Put it on when your temp is stable or nearabouts. Put your chicken on 5-10 minutes later.

I got some guava wood when we were at the Texas Eggfest..it is wonderful stuff...as with any wood chunks, I like to get the temp stabalized then add the chumks and let em burn off till the thick smoke thins some...I gave up on soaking chips or chunks a long time ago...chicken soaks up smoke pretty quick, so don't go to heavy..[p]Wess

I wouldn't soak the wood. Put the wood in and wait for about 20 minutes before putting the chicken on. Unless you like a lot of smoke flavor then add the chicken right away.
