Well I must say thanks to the Stormydog for the brine that the bird took a swim in for 24hrs and Mad Max's Turkey and gravy recipe.
As mentioned by Max the house smelled fantastic from the pot of fresh herbs simmering all day and this stock definitely turned the gravy into the best I have ever tasted. It was great to have a second bottle of wine to watch the magic take place. This was my first turkey on my egg and I must say will not be the last.
It was definitely a fun Christmas up here in Canada.[p]Cheers folks and have a Happy New year!
