Heavy h'orderves - Need Ideas

several of us in our neighborhood are having a progressive dinner next friday. The two main courses are going to be heavy h'orderves.[p]I need some ideas for the Egg. One I already came up with was ABT made with deer meat. What else would be really cool.

    could do mini wellingtons. [p]haven't done them myself, but could be cool. you can get premade phyllo dough shells, put a seared tenderloin in it (marinate in sherry, shallot, etc. as per the typical wellington approach), and add a dab of pate' and duxelles.[p]i think this would actually be much easier and faster to make than wellington, which is good, but intensive.[p]for thanksgiving i did the same shells stuffed with a duxelles of wild mushrooms. dabbed a wedge of boursin on top (you can cut boursin into 24 wedges using unwaxed or plain waxed dental floss instead of a knife). the boursin absolutely made it work.[p]last thing.. scroll down to the portabella thread. i stuffed poratbellas with tapenade one night when we had nuthin in the fridge. if you do them as apps, you'll want "baby bellas", insteada the big'uns[p]i love mushrooms, especially wild. i could eat a tub of duxelles and be happy.[p][p]

    episode of paula dean was her son doing phyllo dough wrapped around mini burgers which were cooked to medium well and finished off inside the dough.

    Pork tenderloin (whole), slice it where the whole thing lies flat, stuff with spinach, procuitto, and goat cheese (doesn't melt out), roll back up and tie off, cook on egg slice into individual 1/4 to 1/2 inch rounds. Thought I had a picture but alas I don't. You can do the same thing with a tuna loin cut cut the same way filled with crab atuffing and cooked or not depending on tuna quality and guest preference.

    We're going to do meatballs in sauce at my office open house:[p]reg small meatballs (we're cheating with Schwann's but you can make your own, better)
    1 bottle Victoria basil tomato sauce
    Heat up.[p]Serve with small Italian rolls--I may get dough from the pizza place and bake mini rolls. [p]You can also get mini potato rolls (little small hamburger rolls, not sure they are widely available, it's a regional thing perhaps here) and serve bbq brisket on them--tiny sammidges. My mom slices brisket very thin and puts on a red bbq sauce.

    sfeehas served with mango chutney and or lebanese yogurt, chili rellenos, mangopork rollups (chillis and cheese work good with this also)

    bamaEGG,[p]I do a tenderloin for my Xmas party.[p]I look for the best deal on choice at Sam's or Costco, then clean it up to get the main tenderloin, a smaller butt tenderloin (I cook this one a little longer for the rare-impaired) and grind up the "chain" and other trim.[p]A little olive oil, rosemary, garlic, s & p and off to the races indirect @ 425 grid, no wood.[p]Horseradish and horseradish sauce in side bowls, surrounded by baguette rounds.[p] [p]hth[p]Big T

    No recipe, but how about pulled pork mini-Empanadas? Cooked your normal pulled pork and then spice it up a little with some salsa, cheese, etc. and then use either biscuit dough or pizza dough and make rounds (about 4-6" diameter), add the pulled pork mixtures, fold into a half circle, seal and bake until golden brown.[p]...ron
