    The link says to smoke the pork for 5-7 hrs. At what temp? Is 250* okay..Thanks...MikeS.

    I would go for 200* or a little lower.

    Never heard of putting paprika, cinnamon or garlic in the seasoning rub to do tasso.

    Not a problem...was just commenting on the spices. I'll check with a couple local tasso producers and get their input but my taste buds don't pick up either of those.
