Thanks for all the advice!!! :)Love the forum!! I have a 16# roast on my XL right now have a few concerns over not Searing 1st but with snow on the deck its difficult to move my plate setter on and off. Hoping a sear in my oven at the end will be okay...? Otherwise I could bring it in now just started 20 min ago...

searing at the end is fine, just make sure you sear it when the internal is maybe 15 degrees under what the final desired temp is.

2B -Entertaining,[p]No problem at all. I let them rest a few minutes and go into a 500° oven. I use a pan with a rack. I call it a crisp-up and it takes maybe 6 minutes or so, turn as needed.[p]~thirdeye~

Alton Brown claims it's better to sear at the end. I can't remember why, but that's what he said.
