Have some redfish filets, with scales still.
Best methond/way to cook tonight?
Shelby, take a sharp filet knife, remove the skin/scales. Coat with your favorite fish seasoning(mines cajun type). Grill on a medium building heat on EGG and paint with butter(more cajun seasoning mixed in). When they are done to liking,,, sprinkle with parmesan cheese and fresh ground pepper.[p]Or place in a shallow metal pan or aluminum foil and place pats of real butter on them with cajun seasoning and fresh ground pepper. Same thing but, once they are done and have their smoke, drain off the moisture, then sprinkle on the parmesan and let is meld into the flesh.
