Boneless Center Cut Pork Loin Roast

I have a 2.33 lb center cut pork loin roast about 2" thick. Could someone give me some idea how long to cook and at what temperature? Thanks

    1 Butterfly the pork tenderloin
    2 A layer of spinach - i use baby spinach - no particular reason
    3 A layer of fresh grated parmesan cheese -
    4 A small amount of roasted pepper bruschetta - (by delallo foods)
    5 Drain and using a paper towel - remove moisture from bruschetta
    6 Rub outside of tenderloin with bad byron's butt rub
    7 No one can rub a butt like bad byron
    8 Smoke at 350 - i do not use a wood on this one - but i suppose you could
    9 I remove at 140 - let rest 15min - slice and serve
