Butt
Options
Just finished a small 5lb boneless butt. Put it on at 8:30 Tuesday morning. Pulled it off at 1 AM after 16 and a half hours. It was at 190 degrees and just fell apart. Was going to pull it off at 200 but got tired of waiting and I do need some sleep tonight. Wasn't expecting it to take that long but I guess you never really know. Mighty tasty if I do say so myself and should be even better tomorrow reheated in the crock with some of Dave's famous BBQ sauce. Just checking to see if anyone was still up. Goodnight!

what dome temp did you use and have you calibrated your dome thermometer? it shouldn't have taken that long

Dome temp between 225 and 250. Yes I did calibrate my thermometer. I don't use any fancy thermos just the BGE thermo and a meat thermo stuck in the meat. I was wondering if maybe the meat thermo was off as the butt pulled very nicely at 190.
