beef rib slabs ???????

Just wanted to let you guys know that you are awesome and a great inspiration.[p]Now to the qustion on how to cook two slabs of beef ribs,, should I do the 3-1-1 and put my mustard and dizzy spice on or is there a different way for beef ribs, I got em thawing right now and will cook them in the morning so i can take hem to the boys at work for the afternoon shift. any ideas on which, dizzy pig to use, I have dust,fire walk,tsunami,raging river....[p]Thanks in advance, wish me luck[p]Any one in Canada want to buy a new car???

    otobiz, doing a whole rack is easy, first off you do need to remove the membrane from the back side of the rack, then season as you like. Do a indirect setup with the dome stable at 250, let the ribs go for about 5-6 hours. Mo need to wrap in foil. On the tail end go ahead and brush on some sauce. You should be fine.
