I'm cooking my first whole brisket for tomorrow. It weighs about 8 pounds. About what time should I put it on to finish about noon tomorrow? Appreciate all the help I can get. Thanks JD

JD,[p]I ususally use 2hrs/lb. as a guideline to figure out start time and then pad that by a couple of hours. I'd rather hold a hot brisket in a cooler than try to speed one up. So if it were me, I'd start it ~6:00-7:00pm tonight for a noon time meal tomorrow.[p]I had an 8lber on last weekend. I started it at 8:30pm on Saturday for a 3:00pm meal on Sunday. It got done early, so I wrapped it and held it for almost 3 hours before serving.[p]Good luck,[p]Braddog
