To all of you who are fortunate enough to have a Trader Joe's in your vicinity, you have to try their fresh salmon burgers and their frozen salmon wrapped around a goat cheese filling. Both cook up wonderfully on a ceramic cooker and taste great. I cooked the salmon burgers on foil with holes punched in it to let the smoke through over grapevines. I served them on a bakery bun with a sauce of mayonnaise, sour cream, mustard, lemon, chopped chives, thyme and italian parsley, and capers. It was the best burger I have ever had.
I cooked the salmon-goat cheese thingie, again on foil, over grapevines at 220 degrees until the salmon was just done. I don't know what I would do without Trader Joe's and Costco!
