boston butt vs picnic shoulder
Options
The places I normally buy my Boston butts were completely out so I came home with six 8 pound picnic shoulders. So... I'll cook on two large BGEs. [p]Do I cook them the same as the butts?
Will the time be about the same?
Should I trim off some of this skin to increase the area for bark or leave it to keep from drying out?[p]Thanks

You cook them the same. You can remove the skin for more bark. I'd leave it on a couple at least because that skin is oh so bad for you goooooooddddddd.[p]I don't remember a noticable difference in timing. It may vary some, just remember rule number 1.....its done when its done.[p]H
