On Friday I cooked Spatchcock chicken with sweetened pineapple juice, brown sugar, soy sauce, EVOO, Jamaican Firewalk, and Garlic cloves rubbed/stuffed under the skin. (You can see the Garlic tumors in the photo) I'll definitely be making this one again! [p]The taters were stuffed with Garlic butter and coated with Dizzy Dust before cooking. On Saturday I cooked filets with sweet peppers, soy basted pineapple slices and more garlic potatos. Sorry for the poor presentation, our guests were too hungry to wait for a proper photo shoot. ;-)[p][p]IMG_1222.jpg[p]IMG_1224.jpg[p]
I'm hoping my baking stone will arrive today so I can cook pizza while the 49ers kick Denver's ass (again) tonight.[p]
