Put in a Dutch Oven with
1/2 cup sugar
3/4 cup water
grated rind of one lemon[p] and get it hot[p]Make a dumpling batter-
5/8 cup sifted flour
3/4 tsp baking powder
2 1/2 Tbs sugar
pinch salt
2 Tbs butter
2 1/2 Tbs milk
few drops lemon extract (optional)[p]Sift dry ingredients together, cut in butter, add milk and extract. Mix quickly, do not over mix, it will be lumpy.[p]Drop batter by teaspoons into simmering fruit. Cover and cook gently for 25 minutes. Don’t take cover off while dumplings are cooking. You can serve with vanilla ice cream.[p]This is a small recipe and I am not sure how many it will serve.[p]I will Be trying this out for the first time in an egg.
