I ordered a brisket from my local butcher, first time trying him out , anyway ..I ordered a complete packer in the cryovac and he got me only the flat. So I bought 2 of them as I am entertaining tomorrow night ... I now have 2 x 7.5lb flats. Can anyone give me some help on the timing. I want to serve at 5 PM and figured I'd like my brisket done around 1 ish and I'll stash it in the cooler until I need to serve it ... What time should I put it on the cooker?
