<p />I made five pounds of beef stix this afternoon, I'll be smoking them tomorrow. They're not exactly slim, 19 mm or 3/4" in diameter. -RP

    Make them like any other sausage, but grind them a second time very fine and stuff into collagen casings. After they cure in the fridge for 24 hours, I'll smoke them with some pecan wood. -RP

    Puppy went back to the specialist today with a diagnosis of arthritis in his front shoulders, he isn't even 4 yet. And he weighed 210 lbs, he is a fat expensive lovable pet. -RP

    It will be interesting to see how those come out! I bought a "stack stick" kit from someplace online and now I can't find it!! My kids file things away from me and I end up finding them months later. :)
    Did you use that skinny stuffing thingy on the grinder to stuff those?

    Naw, that thing looks scary to me. I used my vertical stuffer. 5 lbs goes a long way with these skinny casings. I'll let ya know how it comes out. BTW, I used the 10mm after market plate for the first grind, and I think it grinds just as fine as the medium one that came with the grinder. On the second grind I used the 1/8" plate and we are talking meat pudding. -RP

    I am sorry to hear that.Have you checked out the Solid Gold Wolf King yet?It prevents the dog from bulking up to fast and will help keep the weight down.Molly on her last visit to the vet had lost two pounds.The breeder swears up and down on the product.Ask your vet about it and give it a try.Sure hope things work out and my prayers are with you.Keep that chin up.
