In laws are here and i need quick time and temp for chicken quarters. Also better results removing the skin or not

Mark,[p]Good choice on the quarters. Dark meat is way more forgiving than breasts. You can go faster and use higher temps but I prefer 250° to 275° on a raised grate for 2-1/2 hours or so.[p]~thirdeye~

If you don't have that much time, you can do them indirect on a raised grid @ 400 dome for about an hour. I take them to 190 internal and they come out incredibly moist. -RP

I do them on a raised grid around 350 to 400 dome until 180 internal temp ... flip them a lot at the start of the cook when fat is dripping the most ..a trick I learned years ago.
