BRISKET

Hi Looking to do a Brisket this weekend for the first time.
When buying a brisket do you ask for anything special or is just a brisket? Do you cook it the same you would a picnic or a butt?[p]Any info would be appreciated.[p]Thanks

    You will have mainly one option and that is a flat cut. If you're lucky you will find a whole packer and can use the point to make burnt ends. Yes, you can typically cook it low and slow like a butt. Many people will foil around 180 (or a little before) and add liquids such as beef broth or au jus. When done let it sit in the cooler for a while to rest. Cut against the grain.

    If you have a Sam's close by they normally have some nice trimmed flats and points ready to go. Just remember low and slow.
