Vidalia Onion Pie

Tried the Vidalia Onion Pie from the recipe archives yesterday. Absolutely delicious! As beautiful to look at as delicious to eat. (My "cheese keeper" dictated some substitutions: cottage cheese for sour cream, and swiss for cheddar.) A question for those who regularly bake in the Egg: do you use glass pans? I bought an aluminum throw-away for the pie, because I was worried about glass.

    I have used both cast iron and Pyrex (or its equivalent). Both work very well. I put aluminum foil on the bottom and sides for faster clean up. Enjoy!
