We’re feeling pretty super, how about you? The big game is fast approaching, and while we love football, we love an excuse to invite people over and cook even more! You too can cook like a champion with recipes from Dr. BBQ’s NFL Gameday Cookbook: Grilled Tuna Sandwiches from Seattle and Baked Brie from New England. Who’s going to win? You’ll have to cook both to find out.

Hi, I tried to search the archives, but can't get them to work. I have some 1 1/4" tenderloins I want to EGG today medium to medium well. I haven't done any all winter and need a refresher on temp, time and dwell. Anyone? Thanks RAK

RAK,[p]I'm doing some 2" filets today myself. I like to get the egg a hot as possible...600* or more. Sear each side 3 minutes then dwell about 8 minutes for med well to well done. I suggest for yours a 2-3 minute sear on each side, then about 4-5 minutes dwell for medium...longer if you you want med-well (6 minutes).[p]Let us know how they turn out for you.[p]Bob
