Smoked "Cold" Salmon--Recipe??

Somehow we got roped into hosting my nephew's wedding rehearsal party(go figure!) next month--the party's gotten too large for a sit-down dinner, and I plan on smoking a huge turkey--would like to have some great salmon as well for people to eat from--buffet style. Any great recipes that will impart a nice smoke flavor that can be served cold and not end up being too fishy? Am I asking for a lot, or what? Gracias amigos y amigas!!

    Big Murth,[p]I searched on smoked fish on the net and they all suggested using a brine. I did that (for about 2 hrs) and then smoked over alder and some apple for around 2 hrs (in direct) at about 225. It was great. Here is the site for the recipe I used (Smoked Salmon with a 5 pepercorn crust)
