I cooked TRex's steak recipe and it was AWESOME! Since my "new" egg was previously owned and had a year worth's of seasoning I thought it would be OK. Took her to 700 degrees, seared for 1.5 minutes on each side, pulled steaks and brought temp down to almost 400 and cooked for 5 minutes on each side. PERFECT! Next time I am going to lower the grate and get the meat closer to the flame for a crispier outside layer. Besides that, I can't wait for my next cook![p]Cheers,[p]Bubba

You're a brave man! I read so many threads on singed gaskets that it took me a while before I did steaks. I'm still leary of going over 500.
