This bird was looking lonesome in the cooler case at Publix, so I brought it home, gave it a citrus salt sugar bath for 12 hours, let it dry for 12 hours, then gave it 320 degrees indirect for 2 1/2 hours with a little aromatic stuffing, peanut oil, salt, pepper and apple smoke. [p]Dinner tonight, sandwiches for a day or two and a turkey tetrazini for the freezer.[p]BigT[p]bge-bird-6mar-07-002.jpg[p]

    BigT,[p]Yeah, I had plenty of turkey tetrazini after Christmas...love that stuff. Might have to do a turkey just for that...or at least a breast.
