To Skin or not to skin??????

Hey Folks,[p]I have a 7lb. pork shoulder that I am getting ready to put on the egg. One question though, should I leave the skin on, or cut it off. I hope everyone has fun in Waldorf!![p]Bill

    Billy-Bob, Best be leaving that skin (fat) on there and let er render out......you could put a couple of X cuts in it if you like...Thats what I do and it comes out good, or so says my family........Remeber..Fat side UP!
