Duck It!

I'm doing a 5-lb duck this weekend. Anybody have any suggestions as to brining or not, rubs, marinades, times and temps? Never done one of these before.

  • JimW,[p]JJ will be along in a while, he suggests 350 degrees, about 30 minutes per pound, salt and pepper inside and out. I tried one the other night. Oh, yea, in a V rack over a drip pan. Enjoy!

  • Do it the way Teslamania wrote, and use some apple or pecan chips. It'll be ducking felicious! :-)
