Thougt I would make a trial run tonight. Will try Sun of Italy spice mix on my turkey breast. The mix has imported grated cheese(more than likely Parma),basil, oregano, salt, pepper, garlic powder.I will add the following to the mix and see how it turns out. This is the first time I have tried Italian spices to my turkey. The finger test tasted good, will let you know how it turned out.The breast was in a brine solution with garlic, sugar and rosemary for about two hours.I rubbed the breast with olive oil then put on the rub. Will cook indirect tillthe temp comes up to 165.I added the following goodies to the mix.
2 T spice mix
1 T Raw sugar
1 t paprika
1 t paprika[p]Rub with olive oil after a brine bath. Then apply rub and cook indirect. Will let you guys how it turned out.[p] mix[p]
