Well, we thought that we'd need 2 chickens to feed the ravenous family...but with sides, one was enough.[p]So, after a day in the fridge...and the temps outside at 28 and dropping fast. I made the executive decision not to egg tonight. [p]My solution? I shredded the refridgerated beer can chicken and rolled it up in some corn tortillas and threw them in a pan. I added some enchilada sauce and some cheese. bout 20 minutes in the heat at 400 and you're set.[p]Well, i have to say...even though i consider myself a pretty good mexi-cali cook...i've reached a new enchilada Nirvana with the awesome smokey flavor of the chicken rolled up in that cheesy tortilla goodness.[p]sorry no pics this time...it was devoured in minutes.
