200* using my new stoker. It holds the temp perfectly.

so in effect it's still a hot smoke.[p]i bet with the stoker you can get down even closer to a cold smoke, like maybe 125 or so? that would be a bit easier than doing the smoke offset in a cardboard box attached with dryer hose to the top vent of the egg.[p]been wanting to do bacon myself, but without cooking it. figure my only option is the jerry-rigged offset some have done. but the stoker seems like a potential alternative. cool

im confused here. you said 140 in the first post but now 200? what wood chunks did you use and i would love to know the recipe.[p]gracias

I used the cure from a hi-mountain beef jerky kit. I omitted the seasoning from the kit and instead used about 1/4 cup of brown sugar w/ the recommended amount of cure by the weight of the meat. The bacon was good, but not salty at all, so next time I might add 1/4 cup of salt to the cure mix also. [p]I haven't had any luck finding tenderquick in my area, but bass pro shop is about a mile from my house and they have nice selection of hi-mountain jerky kits. I've used the cure to make canadian bacon, salami and bacon, all with good results.[p]-smokeydrew

You'd need to change the coals but for those low temps what about using briquets ala Old Dave's cheese smoking technique?

I also had trouble finding Tenderquick in my area so I ordered it online directly from Morton Salt. I also got some sugar cure but I have not used it yet. Nice bacon now I just have to find a pork belly.
