Another Butt Q.....

I am doing two butts on the eve for NYs day Dinner. I'm using the "Lechon Asado" recipe that was origonally posted by , who knows and reposted again. Somehow it just doesn't seem right not rubbing it w/ something... What does the acidity of a million limes do? An exaggeration, I'm sure. Should I just sit on my hands and follow the recipe...     The acid in the limes with break the fibers of the meat down... so when it hits its plateau, it renders the fat in the meat down... with the fibers already broken down by the acid, you have a recipe for delicious tender meat!
