What are you using the brine for? If you are smoking the fish (and by that, I don't mean cooking them with smoke), there is a very good recipe used up here in Alaska for sockeye and king. 1c H2O, 4c cider, 1 c br. sugar, 1/2 c honey, 2T worcestershire, 1/2 c salt, 1 T Accent, and 6 bay leaves. I keep my fish in this for 24 hours.
