I got a package of great looking Beef Spare ribs.
They are sliced two ribs at a time. Because they are not on a full rack, do I cook them quicker? [p]I'm going at 250 for 1 1/2 hour right now and they are cooking up great.[p]What internal temp should they be pulled?
Thanks
Matt

Wingman,[p]I would pull them off like a standing rib roast (medium rare to medium). Good luck and Keep Smokin, Dana

    Wingman,
I have a five bone set going right now. They've been on for 2.5hrs at 250-300F (250 Target). For some reason, my temp snuck up to 300 when I was fooling around the house. I was expecting these to go 5-6hrs, like spares. I don't know about only having two bones, but I would think that you'd want 'em to cook slow for a long time to render out all the fat.[p]
