Question on Reheating a Butt

Unknown
edited November -1 in EggHead Forum
I'm cooking two Boston butts today to freeze and serve the day after X'Mas. Should I shrad it before freezing it, or leave it whole and reheat it whole -- and what's the best way to reheat it? I'm thinking (if left whole) I can put it in a pan, cover it with foil, and take it up to about 140 degrees in the oven, but I've never reheated a whole butt and need advice. Thanks for your help.

  • Chuck/Tx,
If you plan on shredding/pulling it, it needs to be done while hot. SO I would recommend before freezing it. Then when you go to reheat it it can be done on the egg or in the oven at about 200-225, just spritz with apple juice or pour on some bbq sauce to keep it from drying out when you reheat it.

  • Chuck/Tx,[p]Best way to reheat, in my opinion, is to buy one of those food saver vacuum sealing kits. Pull the meat while it's hot, stuff it into some of those bags and freeze it, then toss the whole bag into boiling water when you're ready to eat in a couple weeks (or months!). Tastes like it was freshly pulled.

DaveinGa,[p]I agree. I do add either some thinned sauce, apple juice, Coca Cola, broth or some of the drippings from the resting foil. (or a mix of any) to the bags before sealing.[p]~thirdeye~
