    BBQfan1,[p]chop roots into small pieces - pieces about the size of a man's thumb - crush garlic - lightly coat with olive oil - add spices of choice - i have used thyme, rosemary, fresh black pepper, garlic salt, smoked hungarian paprika
    3 medium turnips
    2 beets
    2 medium red onions
    1 carrot
    3 parsnips
    8 small red potatoes
    4 large cloves of garlic
    rub roots with olive oil before adding spices - smoke at 325 for an hour are so until tender - add onions after about 30 minutes - i use apple wood[p]enjoy !!

    <p />TRex,[p]It's called Buckboard bacon and it is made from a boneless butt, a loin or tenderloin. The pic above is a sliced butt. You home cure it in the refrigerator and smoke it to 140° or 150°. It has the appearance of city ham or Canadian bacon when fried and looks like country ham when grilled.[p]Here is the link to my Buckboard how-to.[p]~thirdeye~[p]

    Thanks everyone.... all of that food looks incredible ![p]WooKitties and I just finished unloading a truckload of 5/8" drywall for the kitchen and we're about to microwave something from the freezer.... I'll be thinking about the prime rib, shrimp, bacon, fish, lamb, chicken, veggies... as we freak on split pea soup and toast.... thanks again, folks. [p]John

    Thanks, max. We had a great Thanksgiving down in North Carolina with real food and lots of it... now we're back to freezer food for a couple more weeks.... thanks for the steaks.

  • While on vacation in Miami & stayed in a condo with a few pots & pans i was able to conger up some meals. Here is a plate of Gnocci with marinara sauce & large shrip sautee'd in the same sauce, plated with broccoli.
    all served with a Yellow tail chardonnay
