If you are cooking your brid in a disposable pan what do you do about making the gravy? I don't think it would hold up to direct stove heat for the butter melting stage?

    I'm in the same boat. I doubled up my foil roasting pans, however. I'm going to follow Max's recipe for the butter melting, scrape the pan as best I can on the stove, then transfer to actual cookware once I get the good crud out.

    transfer the drippings and goodness to your 15" black iron skillet (or other suitable pan) and wisk away!
