Getting Turkey Dome Temp Back Up

Had the BGE stabilized at 350 for an hour. Put in the platesetter, water pan, turkey in a V rack in a drip pan and put her in. It's been almost an hour and I can't seem to get above 210 dome temp even with both vents opened up pretty far.

Ideas?

Just be patient?
