Got my Turkey on the EGG but my roasting pan . .

. .was my backup. Waited till last night to go find an ovoid roasting pan. Unsuccessfull. Using the old school rectangular one. Edges of it extend out over the edges of the plate setter and I'm afraid all my juices are burning. It's a constant "boil" going on in my roasting pan eges. [p]Think I can still use that for the gravy or y'all think it will be too "burnt" tasting?

try adding some chicken broth/turkey broth/apple juice to that roasting pan to keep it from burning. ...

mad max beyond eggdome,[p]Just added the rest of my bottle of white wine! Good thing there's 8-9 backups in the wine rack. [p]I'm going to add some of my gravy stock to it as well.[p]Thanks for the advice! Only reason I'm using your recipe is for the gravy. Fried turkey's are the way to go but I love a good gravy. [p]Hopefully it'll turn out.

i think you'll be ok with the drippings. mine boiled for most of the cook last saturday, but it never burnt. the edges of my pan were over the plate setter as well since i have a medium egg and squeezed a ~17 pounder in her!
maybe the celery and carrot bed i had under the turkey helped? i'm not sure, but i'll be doing it again that way later today![p]happy thanksgiving! (unless you're native american indian...then i'm sorry!)

Heya MCG DAWG,[p]Yeah, don't worry if it looks dark and crusty, mine did. I added some of the broth from the giblets to the pan during cooking. My "crud" was very dark......the gravy is out of this world![p]Happy Thanksgiving,[p]Tish

i made the "bird of pray" (pray it comes our good!) a bed of celery and carrots to keep her off the bottom of the pan, at least for a while, and to add to the flavor of the drippings. the original purpose was to gain more headroom in my medium egg so that bird would fit in there! the rest is just benies...

bbqdiva,[p]Thanks, I've been adding wine (little for the bird, little for the cook . . . little more for the cook, etc) and the giblet stock to the pan. Hopefully we'll get some real good gravy out of it.
