<p />thanks max... i love you man![p]do the words "the best turkey i've ever had" from a guest mean anything! it means the world to me and martha![p]dude, this was by the bestest anyone here has ever had...
they gravy was incredible (even though i had to solicit some help from the ladies) i've got turkey stock for soup for days!

    i love you too, rick ;-)[p]glad it all worked out for you. . . that is great color on that bird!![p]btw, if you have leftovers, try making a turkey pot pie. . . take some of the leftover gravy, add some of that stock to get a good consistency ... buy a couple of those already made pie crusts, add leftover turkey, potatoes, peas, carrots and the gravy, cover with second pie crust and bake for about an hour or more (till the crust is nicely browned .. .tastes great and beats the usual warmed up leftovers. .. .

    all the mad max turkey is gone... d u n done![p]i've got some leftovers from a 10# turkey breast i deep fried.[p]i'll be making some stuff tomorrow for the last nascar race with the leftovers.[p]anyone not sure of doing the turkey on the egg?[p]do it! and follow the mad max recipe...[p]thanks man... i'll be doing another one next week....[p]

  • Curly,[p]i used a couple of handfulls of cherry chips for smoke...
    4 hours for this bird we named "bird of pray" cause we prayed it would come out good!
    it was perfect!

  • Rick's Tropical Delight,[p]I see you didnt use a V-Rack in this photo. Did you have any trouble closing the lid with the rack? I have a MED Egg, and plan to cook at 12-15 pound turkey with a V-Rack.

    <p />North_East,[p]i did a dry run test fit with the v-rack and it made the bird to high in the dome. i tried to get the breast of the bird as low as possible by using three kitchen butter knifes on the plate setter (legs up) to hold the pan off the plate setter (no burning of drippings) and then a bed of celery and carrots in the bottom of the cheap pan i bought at the grocery. that pan just barely fits in the plate stetter when i bend the one end and then put two bends near the other end on each side.[p]you might be ok with the smaller bird on the v-rack...
    watch the dome thermometer so you don't bend it when you close the dome. i put the retaining clip on the outside of the dome to hold the thermometer off the breast.[p]
