<p />I'm using Old Daves method in my small. Temp is still not off of the bottom so its below 100. Hickory for wood. Oh man it smells good!
Gouda, swiss, pepper jack, and cheddar

    That's what I'm talkin' about!! Man, that looks good. I'm interested in hearing how your gouda and pepperjack turn out. So far I've just done x-sharp cheddar and swiss.

    Holy Molly! The gouda was great, but the cheddar seemed to take the smoke better, The swiss was a whole new experience for me that I thought was great. All and all, the cheddar topped my list. The pepper jack was good but the peppers still ruled.[p]In order(IMHO)
