What to do with a 8# Boston Butt besides 19 hour cook????

I need to cook an 8# butt quickly today. Was thinking of grinding it up and making pork burgers.....ANY other ideas?

Grind with rub and make meatballs for sceddi sauce.[p]Cheers, Glenn[p]PS, make with smoke.

Midnight Smoker, probably too late, but try pork steaks. Slice the butt into 1" pieces (best to have a meat cutter do it since there is a bone involved) and then grill like a steak.

Slice into strips, trim some fat off of it and spice it up to make some tasso ham out of it.

thirdeye, I just hope you save one blade for food only. I was thinking about using my band saw and just saving one blade on it for slicing meats. However, I better do all my meat cutting at one time 'cause changing blades on that saw is not that simple.

Wise One,[p]That is a break down meat saw for packing along on hunting trips, but it is mighty handy in the kitchen too. It can be fitted with a wood blade, but I use it only for meat. Blades are very reasonable at abour $4 each.[p]~thirdeye~
