traveling Baby Back ribs question

Going to Mobile tomorrow. Question: since there will be limited time to prepare and finish the ribs, should I marinate them tomight or wait until I get there and marinate them for one hour before cooking? I won't be breaking any rules marinating them before hand. Did the rib cookers at Atlanta marinate them the night before or just throw them on that day?

Heya ronbeaux,[p]Sorry Ron, I'm new to the KCBS circuit. Is this competition and is it KCBS? If so, I don't think you can marinate before meat inspection.[p]Regards,[p]thediva

Nope, just fun. Well perhaps bragging rights for awhile, if that counts.

Heya ronbeaux,[p]Well marinate the night before for sure then! I marinate mine one or two days before at home.[p]

    <p />ronbeaux,
I got up at 5AM in Hotlanta to prep my ribs. I have done them overnight. Wrap in saran wrap is usually what I do. Good luck.[p]Mike

    Car Wash Mike,
Thanks! I'll be leaving the house at 0500 and arriving at around 0900, cooking starts at 1000. So it's marinade tonight and pack on ice for the trip.[p]Those sure look good!

you keep saying marinate...or do you mean rub? If not what kind of solution are you going to marinate them in?

Sorry! I meant rub. I can't do two things at once like pack and plan and type.
