Going to Mobile tomorrow. Question: since there will be limited time to prepare and finish the ribs, should I marinate them tomight or wait until I get there and marinate them for one hour before cooking? I won't be breaking any rules marinating them before hand. Did the rib cookers at Atlanta marinate them the night before or just throw them on that day?

I got up at 5AM in Hotlanta to prep my ribs. I have done them overnight. Wrap in saran wrap is usually what I do. Good luck.[p]Mike
Thanks! I'll be leaving the house at 0500 and arriving at around 0900, cooking starts at 1000. So it's marinade tonight and pack on ice for the trip.[p]Those sure look good!
you keep saying marinate...or do you mean rub? If not what kind of solution are you going to marinate them in?
And oh yes...also a 17" BlackStone gas fired griddle!
